Sometimes I’m asked: “What means cooking to you?” Cooking comes from your heart! That is a rather simple transcription, isn’t it? Well, it certainly has to come from the heart, but inspiration, sensation and concentration appear to be the keywords for it. The boys in the kitchen have to strike together and to build a close team otherwise everything will fail. Absolute silence while serving, ‘no whinging but cooking’ and tasting, tasting, tasting! Everyday a thousand times.
How deliciously one cooks depends on several elements: technique, material, ingredients… First of all the ingredients play an important role.
We are always in search of fresh and genuine products. Sometimes we find them around the corner, sometimes a bit further off.
We have to be aware of natural, pure, authentic tastes, to go with the seasons, to pay attention to the stage of maturity of vegetables and meat. All these sorts of things you have to consider finding a concerted balance for your dishes.

Each single noon and evening we struggle anew for one thing: that everybody leaving our restaurant will be pleased and impressed. Luckily enough we have quite a number of regular guests who keep us fierce and even-tempered.
Therefore cooking means to me: Surprising you, our guest, with taste and passion and doing all in my power so that you are longing to come back as soon as possible.’
